YouTube video by Chartermade teaching sharpening with sandpaper
- stick 1200-grit paper to marble, granite, glass with spray adhesive
- Sharpie on the edge to track progress grinding the whole edge
- bowl of water to dampen paper with fingers
- shoots for 18° angle
- hold at 90°, half it to 45°, half again, drop a little
- pushes the knife over the paper
- handle curved edge by tilting the blade
- feel for burr with thumb
- once raised burr, strop by pulling over leather rather than pushing
- hold with two fingers on back
- slightly lower angle for stropping, since leather compresses
- to finish, strop back side once or twice
